Last updated: 17 August 2026
Wynn Al Marjan Island, the US$5.1 billion resort under construction in Ras Al Khaimah, will open with 22 restaurants and lounges plus a destination beach club. Two venues have been formally announced — a French-American steakhouse by Alain Ducasse and a Middle East outpost of the Delilah supper club — while Wynn's design chief has confirmed the cuisines behind much of the rest. This tracker lists everything confirmed so far, with dates and sources, and will be updated as further venues are announced.
Key takeaways
- Wynn Al Marjan Island will open in 2027 with 22 restaurants and lounges and a destination beach club, all designed by Wynn Design & Development.
- Formally announced so far: a two-level, 1,820-square-metre French-American steakhouse by Alain Ducasse, and Delilah, the 2,060-square-metre supper club created with Los Angeles hospitality company The h.wood Group (both 25 September 2025).
- A signature Lebanese restaurant inside the resort's Enclave retreat was confirmed in July 2025; its chef, a Beirut and Paris restaurateur, has not yet been named publicly.
- Wynn design chief Todd-Avery Lenahan confirmed Japanese, Italian, Indian, Indo-Persian and Greek restaurants, a food hall and an Aft Cocktail Deck to The National in September 2025.
- A four-person F&B leadership team was named on 10 February 2026, and Wynn is hiring more than 3,500 food and beverage staff, including specialists in chocolate, dim sum and Arabic sweets.
- A global partnership with Chef's Table, the brand behind the Netflix series, was announced on 17 February 2026 and covers Wynn Al Marjan Island.
What has been formally announced
Alain Ducasse's French-American steakhouse
The first restaurant confirmed for the resort, announced on 25 September 2025, is an as-yet-unnamed steakhouse by Alain Ducasse, the chef with more Michelin stars than almost anyone alive. It spans two floors and roughly 1,820 square metres. The concept takes the American steakhouse and rebuilds it with French technique: starters such as duck foie gras brioche and cheese soufflé, a "Beef Club" section where guests choose their cut, sauce and sides, tableside carving, and a flambéed baked Alaska for dessert.
"The culinary experience we'll create will radically reinvent the steakhouse concept by boldly reinterpreting the American classics with a contemporary French flair," Ducasse said in the announcement.
Delilah, with The h.wood Group
Announced on the same day, Delilah is the supper club that has operated at Wynn Las Vegas since 2021, created in partnership with The h.wood Group, the Los Angeles company behind the original Delilah in West Hollywood. The Ras Al Khaimah outpost is the concept's first outside the United States: approximately 2,060 square metres on the resort's first floor, modelled on the great 1950s supper clubs — El Morocco in New York, Maxim's in Paris, Les Caves du Roy in Beirut — with a fireplace lounge, nightly live music and a stage. Las Vegas signatures including the wagyu beef Wellington will carry over. Whether the Vegas venue's strict no-phones policy applies in Ras Al Khaimah has not been said.
What is confirmed by cuisine, not yet by name
Most of the portfolio has no public name yet, but the picture is more detailed than the two headline announcements suggest.
The clearest addition is a signature Lebanese restaurant, confirmed in July 2025 as part of Enclave, the resort's ultra-luxury retreat within the tower. The skylit restaurant serves breakfast to Enclave guests only, then opens for lunch and dinner as what Wynn describes as "a vibrant celebration of Lebanese cuisine". It will be helmed by a "renowned Beirut and Paris restaurateur" making a UAE debut — a name Wynn has not yet published.
Separately, speaking to The National in late September 2025, Wynn Design & Development president Todd-Avery Lenahan confirmed the resort will include Japanese, Italian, Indian, Indo-Persian and Greek restaurants, a food hall, pool bars, a lobby bar and an Aft Cocktail Deck overlooking the Sea of Dreams beachfront show. a nightclub with Wynn's "Only At Wynn" DJ line-up and a beach club on the resort's 550-metre private white-sand beach round out the picture. Wynn's February 2026 statement describes the mix as spanning fine dining, social dining, nightlife, a food hall and casual concepts, including "legacy Wynn Las Vegas restaurants, international brand partners, and concepts developed exclusively for the resort".
The team building it
On 10 February 2026, Wynn named the four-person leadership team running the programme:
- Soumya Goswami, Senior Vice President of Food & Beverage — 19 years with The Oberoi Group, plus senior roles at Melco Resorts & Entertainment and Galaxy Entertainment Group.
- Mathew Goodlet, Vice President of Culinary — helped pioneer the award-winning culinary programme at Atlantis, Dubai.
- Andrew Burns, Vice President of Fine Dining — integrated resort experience spanning Wynn Las Vegas, Atlantis Dubai and Marina Bay Sands.
- Robert Gamch, Vice President of Daylife & Nightlife — previously with TAO Group and Hakkasan Group.
They are supported by specialists from international integrated resorts and the UAE market, and by outside partners including Elizabeth Blau of Blau + Associates and Alain Ducasse. "This is the most comprehensive food and beverage build we have ever undertaken," Goswami said.
Recruitment matches the ambition. Wynn began a global search for more than 3,500 food and beverage colleagues, including what it calls masters of their crafts in chocolate, pastry, dim sum, Chinese barbecue, Arabic sweets, cake artistry and butchery, alongside mixologists, baristas and tea, sake and wine sommeliers. We covered the hiring drive in our guide to Wynn Al Marjan jobs and careers in 2026. Wynn is also building six staff restaurants across the resort and Oasis, its employee housing community.
The Chef's Table partnership
On 17 February 2026, Wynn Resorts announced a multi-year global culinary partnership with Chef's Table, the brand behind the Netflix documentary series. The partnership launches at Wynn Las Vegas in September 2026 with "Wynn Revelry by Chef's Table", a weekend of chef-led events, and it explicitly covers all Wynn properties — meaning Wynn Al Marjan Island is part of the programme from day one. No Al Marjan-specific events have been announced yet, but the framework points to chef residencies, pop-ups and exclusive dinners at the resort's signature restaurants once it opens.
What is still unconfirmed
Twenty of the 22 venues remain unnamed. The open items worth watching: the name of the Ducasse steakhouse; the identity of the Beirut and Paris restaurateur behind the Lebanese restaurant; the names of the nightclub and beach club; and whether Delilah's no-cameras rule travels to Ras Al Khaimah. The opening itself is confirmed for September 2027, after the "modest delay" Wynn acknowledged in May 2026 — we track that separately in our Wynn Al Marjan opening date explainer.
